Malcolm, On my SE 2020 running the latest iOS, that gesture was not defined, so I don't think there is a default gesture. For those wanting to set the gesture for Watch Item: open Settings, Accessibility, VoiceOver, Commands, All commands, VoiceOver, and the last item will be the Watch Item gesture. For me, there was no finger gesture, but there is an assigned keyboard gesture of Shift+hyphen. Probably VO key+shift+hyphen. HTH,
