Hi Anthony, Open Settings. Choose the button at the top of settings with your name, then iCloud, then Manage storage. It may take a while, but eventually everything you have in iCloud will be listed, with the one taking up the most space listed first. Find the app whose data you want to delete, and double-tap. A screen opens that tells you how much data is in iCloud, and that screen includes a delete Data button. Double-tap it and confirm that you want to delete if you're asked. The data will be deleted.
