Hi Stacey,

Connect your iPhone to the computer, find it in the Source list and then tab
until you hear "Music". I am not sure if you use Windows or a Mac, but if it
is Windows press the space bar to check the checkbox, then tab until you get
to where it says "Sync Music". If it is checked you can tab again and either
check "Sync Entire Music Library" or "Sync selected artists, playlists and
genres" If you want to remove all music and not sync anything, just uncheck
the first checkbox "Sync Music". Then tab to apply and press space or enter.
You don't actually have to manually delete the music on your phone, if you
had music before and you uncheck this and then sync your phone it will erase
all that music.

I believe, however, that if you have automatic downloads enabled in
"Settings", "General" and "Store" that if you buy a song in iTunes on the
computer it may still download to your phone, just make sure you disable
automatic download for music.
