I have never done this, but somewhere in the settings, I would think there is a 
place to select the audio destination.
Perhaps a quick call to Apple?

So I thought it was the device I was using, but it turns out that it is not.
I go to play a song from my Apple Watch, first of course having connected an 
appropriate Bluetooth device to it, I asked the watch to play a  song, but the 
audio of the song comes out from my iPhone. The only way to rectify that 
situation, which in my opinion is stupid, is the totally turn the phone off. 
Then it will play through the watch. But, you shouldn't have to do that. Unless 
of course you do now.
Running a series 6 watch with the latest watchOS, and running an iPhone 11, 
with the latest iOS. Is this a bug or something?
