This then has not changed in the 4 or 5 years since they came out and it's a bit of an irony because most other headsets do this just fine.

You would have to stop the book and then see if your AirPods could pick up your watch. I have not got this to work consistently. They are extremely easy to pare with your phone. In fact, they should automatically pare once they see your phone.
