I'm not sure this will help, and I'm sure others can do a better job of explaining this than me, but try the following.
First, to move an object around on the home screen, you need to go into edit mode. You can do this by flick down on any object on the screen until you hear edit and then you double tap. You're now in edit mode. Next, you find the object you want to move, like the Mail app, and flick down until you hear something like "Drag Mail app" and then double tap. You're now dragging the Mail app around the screen. Now you can move around your home screens like you normally would and when you get to where you want to place the Mail app, you flick down until you hear options like "Drop before" or "Drop after". Now you double tap and the Mail app will be moved. In your case, I'd suggest clearing out the dock of the apps you don't want in the dock by moving them to somewhere else on the home page. Once that's done, you can then start moving and rearranging the apps in your dock. Note that you can drag multiple objects around, by just finding them and flicking down until you hear "Add to drag", which is good if you're creating a folder or moving a bunch of apps to a new home page.
