I don’t know about muting all the sounds.
If you have enabled haptic time in the clock settings, while you have speech off, you just do a one finger double tap, perhaps a little slower than normal, in the upper righthand quadrant of the watch face, or around the 2 o’clock position if you were on an old analog watch. But, it is a hit and miss proposition for me. If I put my hand over the face and lift it after the watch had been awakened, then do the double tap, I can get the haptic time probably 75% of the tries.
