Sounds like you're doing everything right to me. After you double tap on the add note button, make sure you're in the edit field and it has focus. Type what you need to type into your note, and it should appear. You should see it when you swipe around or explore the screen. Changing the roter to characters or words swill also let you see what you've typed into the edit field. When you tap the done button, it should still be there. When you go back to your folder list, you should see the number of notes in your folder has increased by one.
