Another option is to use the volume up button to take the picture so you don't jiggle the phone as much. Also, if you are taking a picture of a person, VoiceOver will tell you if the face is in view, whether it is centered, near the top, etc. It will also tell you if you are holding the camera level. If you want to get more deeply into taking pictures, there is an excellent book by a woman who is blind, Judy Dixon, available from the National Braille Press.
