Once you are all checked out at a store and are ready to pay, , that is when you press the side button two times to initiate Apple Pay on your phone. After you press the side button two times it will automatically do the Face ID so have it close to your face and ready. After that, you just have to put your phone near the Apple Pay terminal to complete the transaction and you are done.
