In order to look day by day, you need to double tap the Week button in the Steps screen of the Health app. Once you do this, you will be able to look at each day and see the total steps in that day.

Yes it can track your steps.

Probably best to have it in the front pocket; but I believe it uses distance traveled not just motion, so carrying it in a bag shouldn't matter.

In health, select the browse tab, and then the profile button in the very top.

Fill out all the information.

You can opt to share it or not.

I think after you have the profile filled out, and selected what you want for notifications, the summary should include activity at the bottom of the screen which will include steps.

If you double tap on steps you can select day, week, month, year .... 

Or, install Pedometer++ and try it out.
