I doubt you can do much on the thermostat itself if you can't use the app except maybe if you call Aira to help out. Most of these thermostats have touch screens. Having said this, our Honeywell T5 always works unless of course the power goes out, but then of course the furnace or in your case AC won't work anyways. Your connection to the thermostat would only not work if your internet service wasn't working, actually your Wi-Fi typically doesn't go down but of course if there is no connection to the outside all you have is a local area network with no connection to the outside, kind of like having 3 or 4 of the old cordless phones which have intercom function, that would still work if the phone service goes down, but it won't do you much good.
You can always ask your HVAC company to also install you a good old $15 thermostat although I don't know how these work with cooling since where I live cooling is not usually something we have to deal with a lot. I still have one of these hooked up as a backup so if for some reason our Honeywell really wasn't working because the internet was down I could just walk up to the other thermostat and push the little lever over until the furnace starts up. Normally this manual thermostat which has absolutely no programming functions whatsoever is turned all the way down so it does nothing unless we really need it. And if the power goes out completely in the middle of the winter then we are OK as well because we have a wood stove in the living room which easily heats the entire upstairs.
