It seems at this point you can't any more unless you start the text message in messages and use the "Dictate" button. I am also a bit ticked off at this, before after I told SIRI to send a text message and it would repeat it back I could just touch the screen and then near the top I'd find my message and I could double tap on it and edit any mistakes and this seems to be no longer possible. Maybe Apple thinks Siri is perfect now and there is no need for editing but of course this is BS because Siri sometimes is ridiculous when it comes to writing stuff nobody said.
