Joseph is correct regarding separate ring tones for different SIM cards, here from a Apple support forum discussion:
If you have 1 SIM card and 1 eSIM, you can't have different ringtones for the two phone numbers. You can only change the ringtones for different contacts. As for using data, just make sure that roaming is off and you shouldn't be using data when you are not connected to your carrier. Go to Settings > Cellular and double tap your Canadian eSIM, then make sure roaming is off. However, this may not entirely avoid any charges if somebody calls or sends a text message to your Canadian phone number and it is delivered to you via a carrier in another country.
