If I am understanding you correctly, this is not a watch face exactly, but a complication that by default is associated with the face. It might be one of the complications associated with the compass app. If you edit the watch face, you will find an area listing the complications available for the face and what they currently are. Some complications do appear to be less verbose on some faces. But you can always switch out the complication with another either from Apple or a third party vendor. One thing about complications, is that they generally don’t update frequently to help make the watch battery last longer.
