When I want the watch to not talk, I mute VO the same as on my iPhone; I do the three finger double tap. When I want it talking again, like in the morning, I repeat the gesture. Of course, I usually have to press the digital crown once first to get VO awake, but that way it can track whatever it wants while I'm asleep.
