First, Apple doesn't allow you to record phones calls. The Microphone is taken over exclusively by the phone call. I just did a test and called my iPhone from our landline while recording with Just Press Record and VoiceOver announced the call but the ringer didn't ring. If I answer the call, Just Press Record stopped recording.
If you don't want to be interrupted, turn on Do Not Disturb while recording.
