Or, if you use a keyboard with your iPhone, command+a is the toggle to 
mute/unmute the microphone.
Or, there is the tab usually at the bottom left of the screen to mute and 
unmute the microphone.

I always keep my microphone muted unless I want to speak.  Then I press and 
hold down the space bar and talk like I'm using a walkie talkie.  Let go of the 
space bar when you finish speaking and the microphone will be muted again.
