There is no way other than tapping or flicking on the screen within every 5 
minutes to keep it unlocked.
Or, like you say, setting the lock to Never while using that app.
Some apps, however, if you manually lock the phone when you start playing a 
show will keep playing.
I think Overcast does, but it has been a while.
If streaming a TV show or movie, check to see if there is a picture-in-picture 
option, if so, activate that with a double tap, wait a few seconds and lock the 
phone and it will keep playing.
That is how I manage it with things I am playing through the Xfinity stream app.

Settings itself to "never lock"? Which I wouldn't have to one to do because 
most of the time, I'd like for the IPHone to lock itself.
