This will depend on the iPhone you want to use as your backup phone. Newer iPhones have more features to help manage the health of your battery. Typically LI batteries like shallow charges to preserve charging cycles, i.e. let it run down to around 40-60% and then charge it up to 80%. The battery management software in the iPhone will take care of much of this for you. For me personally, I wouldn’t hesitate to keep a backup phone plugged in. I’d think a few things you’d like to do though are:

  1. Keep it out of a warm place when stored
  2. Turn on the battery performance and optimization features on your iPhone
  3. Perform the usual battery saving steps you’d do on any iPhone and probably be even more aggressive since you won’t be using this phone, e.g. turn on low battery mode

I have a back up phone that I would like to use for reading books etc. When I had a back up phone in the past I kept it plugged in all the time and apparently this killed the battery. How can I use this backup phone in such a way that I do not destroy the battery?
