So when my old phone is cleared to default can we just place the phones
side by side for her apps to transfer to it from her other phon ein this
situation?

Then, go to Settings, General, Transfer/Erase iPhone. Select erase all
contents, etc.
Then, it will be like a new phone.
Before that, you may want to remove it from your Apple account, but as I always
do in these situations, I recommend you call Apple to make sure.
If she wants pretty much everything you already have on the phone, you probably
could go to settings, your name, and sign out.
Then, have her sign in with her Apple ID. But, I'd still double check with
apple...
If things go wrong, you will end up needing to talk with them anyway.
