I don't think so. The reason that voiceover reads these things as links is because they will behave like Links. For instance, if you double tap on a phone number, you will be given the option to call that number. For dates, you are given various options related to the calendar. You can create a calendar event, create a reminder about the event, and even just go to the calendar for that date to see if you have anything scheduled for that date and time. I looked in settings for the calendar and phone, and I did not see any way to disable this feature. Maybe someone else on the list knows of a way.
