I believe you can use Copilot on the phone without signing into your Microsoft account, but if you want it to remember your chats on both your computer and the phone apps, you would want to sign in.
Of course, just try Copilot without signing in and see what happens. Once again, no link between Copilot and Apple Intelligence exists so if you simply want to use Apple Intelligence features with Siri and in whatever other form they exist and are emerging with future iOS upgrades, you don't need your Copilot password or even have the app installed on the iPhone. If you want to use the Copilot app for iOS then you of course may want to sign in and possibly you have to sign in (I haven't used it so not sure) and that is where the password reset comes in.
