To make a purchase, you need to click the side button twice quickly. Usually, you doo this while looking at your iPhone if you use Face ID. Otherwise, you'll be asked for your passcode or password to confirm the purchase in addition to the rapid double click. You'll always be asked for a password the first time you do this afgter your iPhone restarts and is turned on. After that, you'll just have to show it your face or use Touch ID or your passcode.
