Yes, the default option for Siri has always been a press and hold on the power 
button, or before that, the home button.

You can disable Siri from the power button, but I see no reason to ever do that.

Yes, put the action button back to silent/ring mode and enjoy.

I think I figured out the answer to my question but I would like confirmation 
Siri can be activated with the on off button on the right so I assume I could 
set the switch on the left back to silent?

The right side has the "Side" or power button where the power/Side button has

As I’m also probably going to switch from an iPhone with a home button to the 
17E, I was wondering: does the 17E have an action button and if so, which do we 
need to press once/twice/three times for the functions you describe. I mean, 
you say the side button but on the 17 (the 17E wasn’t in stores yet when I 
checked) there were two buttons on the right side of the phone, so I’m assuming 
one is the side button and the other is the action button.

Below is an excerpt from a word document I have on my web site for VoiceOver 
gestures.

The gestures are the same as all other phones, but unlocking, and some other 
things are slightly different.

I hope the below helps.

 

 

For devices without a home button:

Side button replacing Home button commands

•    Unlock Phone: Facial Recognition, or tap the  Side button and enter your 
passcode

•    Accessibility Shortcut: Triple click of the Side button

•    Screenshot: Simultaneously press and quickly release the Side button and 
Volume Up button

•    Activate Siri: Press and hold the Side button

•    Turn off the iPhone: Click and hold the Side button and Volume up or down 
button.  The Slide to Power Off screen will appear. Release the buttons! (It’s 
crucial to release the buttons because Emergency SOS will automatically 
activate if you continue to hold them down.  Then double tap the power off 
button on the screen

•    Activate Apple Pay: Double click the Side button

New Gestures replacing function of the Home button Starting at the 

bottom of the screen and slide one finger up. You will feel three haptic 
vibrations referred to as "clicks" (similar to the old "click" when pressing 
the Home button). Each of these three clicks will activate a function. Note: 
The first click alerts you that you are in the feature.

•    Return to the Home screen: From the bottom of the screen slide one finger 
up until the second click. Lift your finger from the screen.

•    Activate the App Switcher: From the bottom of the screen, slide one finger 
up until you feel the third click. Lift your finger from the screen.

•    Activate Teachability mode (if enabled in Settings): From the bottom of 
the screen, slide one finger up until you feel the first click. Quickly flick 
down.

Starting at the top of the screen, slide one finger down to feel the clicks.

down until you feel the second click. Lift your finger from the screen.
