As Raul said, you will no doubt get lots of different options. I agree with Raul, that PlainText is very good, especially for free. I also like NoteMaster, and Meteor Notes. They both have a lite version to see if you like them with a limited number of notes.
It is a good idea to try out several and see which approach fits best for you. I don't have the links, but you can find them in the app store.
