What email provider are you using? Also, do you want to move messages
from your in box into these subfolders or do you want messages to go
there directly?

I've never created folders from the iPhone itself, but I have created
them in Gmail with IMAP, so they do show up on my iPhone. I typically do
this with Thunderbird on my PC.

I don't typically create folders as subfolders of my in box though. I
just create them in my account, so they show up as siblings of my in box
folder.

When I used rules in thunderbird or on the Gmail server, I did have
these rules send messages into sub folders of my in box, but like I
said, I don't do this any more. If you do want messages to go straight
to these folders then you will need to set up some rules somewhere, like
on the Gmail server.
