Here's a support article from Apple that gives a little more
information on backups.

Essentially, many things are included in a backup (i.e. bookmarks,
settings, app data, and so forth) but not everything. Synced content
such as music, apps themselves, books, and TV shows is not included in
your backup but will most likely sync back to your device from iTunes
once the restore process completes and the device reboots. Also, apps'
tmp and caches folder will not backup, so you'll lose a bit of data
within apps. Examples of data you will lose are temporary recordings
in Ootunes and, in most cases, episodes downloaded via podcast
clients.

While it's not perfect, a good rule of thumb is that if you allow
iTunes to restore a backup to an iOS device and then do a sync, you
should have most of your personal data. Some other data that can
generally be downloaded or resynced, is not included.

Another note is that if you don't password-protect your backups,
you'll also lose your keychain which contains your account passwords.
So in general, it's good to password-protect backups.
