If you double tap and hold on an app and wait for the tone, you'll get another home page. This page will go away when you press the home button if you don't use it, but if you do move something there, it'll stick around, and you'll have another home page. You can use this method if you want to use more than two pages even though you don't have two pages worth of apps yet. Right now, I just have two pages, and I heavily use folders. I'm not sure if I like that or not, but I'm still contemplating how to best organize my apps.
