I was that way too until I got frustrated with the way apple sorts music.  Then 
one day I realized that I had been banging my head against the wall for 
nothing.  You can create play lists right on the iPhone and add or remove songs 
from those play lists.  After I figured that out, my music is my way if you 
pardon the musical pun.

  When it comes to playlists I may not be the best person to ask. I have all my 
almost 4,000 songs on my iPhone because I have a 64 Gig 4S and even at iTunes 
Plus quality my music takes up only 25 Gig, but I must honestly say that I 
don't actually take full advantage of that music and I rarely make playlists. 

   

  Let me know how things go with advice you may get from others and I'll help 
if I can, but it would most likely have to be on a Sunday. Also, have you 
listened to both of Jonathan's FS Casts about iTunes 11? I know you are a Jaws 
user although I can't remember if you have Jaws 14.
