Yes, two or more texts will be sent. They are usually joined together so that you won't notice the difference, but not always.
If you want to force iMessages, you can go into settings, messages and turn off "send as SMS." This prevents the iPhone from falling back to SMS when iMessage is unavailable, but of course it risks the recipient not getting your message for some time.
