I do not have any problem with Siri on my iPad. I am dictating this email, and whether or not I dictate With or without the headphones in, I do not have to make any corrections very often.
The best thing that I could advise you to do is to speak Clearly and not Quickly, but in your normal voice. When I am using the headphones, I always hold the wire so that the microphone is near my mouth and doesn't move.
