Bring up the App Switcher by tapping the home button twice. Now double
tap and hold on any object until you hear the tones. Now you can close
an app by double tapping it.

I go through and close up my running apps occasionally, but to be
honest, I don't usually worry about it too much. Memory is there to be
used, and having apps you use frequently left running means you can
bring them up more quickly, and jump back and forth between them more
easily.
