Hi Neal, just to clarify, the apps themselves are not backed up. Only
your user data pertaining to your apps gets backed up. When you
perform a restore, your apps actually redownload from the app store.

This approach makes a fair amount of sense and only has a few
downsides, one of which is that if you are holding onto an earlier
version of an app which is no longer available in the iTunes Store,
you might be forced to update.

Also keep in mind that you should not assume that everything on your
phone will be stored in a backup (whether iCloud or iTunes). You'll
find that certain data is excluded from backups. To give a random
example, in the Ootunes radio app, recordings that you've explicitly
marked to save permanently, get backed up, but temporary recordings
don't.
