Hi there. One approach could be to reset and erase all content from the iPod 
touch. That of course is kind of it extreme especially if there are certain 
apps that you want to keep. One thing to keep in mind is that if you use iTunes 
to sync, you can connect the iPod touch and under the apps section of the 
device tell it to not install newly acquired apps from your Apple ID. This 
second approach is how I do this with my children's iPhones. My phone will 
install all newly acquired apps whether it is by me or by my children. However 
there is are set up so only the apps they install are on their phone. This way 
we are all able to use the same Apple ID, and I can keep track of which apps 
they are purchasing.
