Hello Anouk, Anne, David, and Others, In addition to David's comment about the selected keyboard determining the language used for the spell-checking dictionary, I'd add that on the newer devices that came out since Siri was implemented, such as the iPhone 4S and iPhone 5, and the 3rd and 4th generationiPad models and iPad Mini, the selected input keyboard language also determines the recognition language being used for dictation, when you double tap the "Dictate" button. This assumes that you are using the dictation feature for more than one of the supported languages.
A quick tip for anyone who is using the French keyboard under iOS 6: one of the hidden gem additions to iOS 6 is a new French keyboard setup under Settings > General > Keyboard > Keyboards > French that allows you to select "Accented AZERTY". This layout adds an extra context-sensitive key between "n" key and the "delete" key. It will switch between an apostrophe and various accents depending on the first letter to the left of the input cursor. This makes typing accented letters with the virtual keyboard much easier, since I can type an "e" with an acute accent simply by pressing the "e" key and then pressing this key. Of course, just as with the iPhone in all languages, common words can be typed without accents or apostrophes, and the appropriate accents will be added as corrections, but this is still a very useful feature.
