Hi, if you have the 4S or newer go to Settings, General, Keyboards and
then add the Spanish keyboard. Then when you are in an edit field, you
will see a next keyboard button next to the dictate button. Double tap
that and you will switch to Spanish. Now the dictate button will
understand Spanish. Just double tap the next keyboard button again to
switch back to English. Now, if you are using a device older than the
iPhone 4S or if you are using something older than iOS 6, then you can
use a program like Dragon to dictate in Spanish. it's free and Voice
Over friendly. However it won't give you the same sort of flexibility
that the dictate button will like I originally described.
