I think that's what I've been looking for - some document that describes the concepts to help me get my head around it, using Windows and JAWS.

It was much harder for me to learn because it does things differently from standard Windows programs. That said, once I got my head around the very different approach, I found it easier than WinAmp or Windows Media Player. About a year after that, I switched to the Mac. Note: I never worked with a Mac before I switched, so my finding iTunes easy once I got my head around it had nothing to do with working on a mac.
