I'm not sure if I've seen this in Thunderbird or Gmail, but I have seen
an apply to folder option, which will apply a filter to an existing folder.
Using Google, I did see that this feature was added to Gmail in 2006.

There are no folders in gmail other than the default folders like Inbox,
Starred, Sent Mail etc.
Anything else you create in order to sort emails is done via labels.
Creating a label is easy, just click on "Edit Labels", then find the edit field
where you can type the new label name and then click Save.
Once you have a label, for example, Viphone, you then set up a filter. All you have to do
is find the "Create Filter" link.
Here you can choose to filter mail with a certain "From" address or a certain
subject. Then a number of actions are listed which you can perform.
One of these is to apply a certain label.
If you want all mail from the Viphone list to have the Viphone label, then first put
"[email protected]" in the "From" address, then click the button "Next
Step".
On the next page check the checkbox "Apply the label", then from the combo box of available labels
select the "Viphone" label and click "Create Filter".
That's it, now any emails coming from [email protected] will
automatically get the label Viphone which is equivalent to them being moved
into a Viphone folder.
As Raul pointed out, on the iPhone, the labels appear as folders provided you have setup
your gmail account correctly by having selected "Gmail" as the account type.

Hi, since you use gmail, this is going to be the best way to do what you ask.
Simply setup labels on the gmail site http://mail.google.com/mail/h and then
set up filters so that viphone messages or whatever are assigned the proper
label. Labels in gmail are like folders. You can make it so messages to viphone
skip the inbox and have the viphone label applied. The iPhone sees labels from
gmail as folders.
