As you are using the latest version of iOS, after activating the edit button, turn your rotor to actions. Use the single-finger vertical flick whilst on the actual bookmark name. When VO says delete, double-tap. The bookmark will be removed. Note: I do not know if this works with bookmarks which come with Safari.
