As with any email you create on iOS outside the mail app, it will automatically be from the default account. However once you've got the email there it is easy to change the account from which it is being sent. Simply double tap on where you see the account, i.e. your email address. This will open up the Cc, Bcc and From fields for editing. You will need to double tap on your account again than there will be a picker at the bottom of the screen from which you can choose the email account from which you want to send.
