Hi Stephanie, As far as the email account, just go to Settings, Mail, Contacts, Calendars, double tap on the account you want to delete and then double tap on "Delte" which is the very last button so you can do a 4-finger tap near the bottom of the screen to jump to it immediately. Now double tap on Add, select Gmail as the account type and fill in the information (user name, password etc.)
As for syncing apps, go to Settings, iTunes and App Store, then turn off what you don't want to sync between devices, you have 3 choices, Music, Apps and Books. If you turn Apps off on your iPad and buy an app on your iPhone or computer it will not sync automatically.
