Hi, the saying, "There's an app for that," doesn't change when it comes to making recordings. I don't have personal experience with recording from the iPad as yet since I recently got one myself. However on the iPhone, my preferred recording app is Voxie Pro. I like it because it disables the listening of Voice Over while you record. Some might not like this because of always needing Voice Over feedback. It also lets me choose the quality of the recording. So, I crank mine up to 44.1 kHz. Then I can easily edit and convert later if I so choose. To get the recordings off the iDevice, you can use its built-in web browser which you then connect to from your PC or laptop on the same subnet, or you can use iTunes file sharing. I don't know how well it works on the iPad, or if it runs, but on the iPhone it doesn't do too bad. I don't know if the microphone on the iPad does sound processing like the one on the iPhone does, and so this might be something worth considering.

I hope this helps, and remember that there are many many apps to choose from. Vocie Pro, Dropvox, ETC.
