Look in iTunes media, mobile applications.  There you will see all the apps you 
have backed up.  You can also see the version number.  I never delete any of 
the apps there as if a new version comes out and it isn't accessible, you can 
delete it from your phone by doing a double tap and hold.  Then lift up your 
finger.  Then double tap again the app you want to delete.  Then, sync your 
phone with iTunes and the older version will be installed.  I should say, if 
the newer version has already been backed up, you'll need to delete it from the 
mobile applications folder before reinstalling the older version.  It sounds 
like allot of trouble but it's actually quite easy.
