Hi Rob, As some others have already pointed out, the Skype app is very accessible, I would call it extremely accessible.
A 2-finger double tap will not start or end a call, to end a call you have to double tap the End Call button which is very easy to find since it's all the way across the bottom of the phone just above the home key. If you put your finger on the home key and move up just a bit you should hear "End Call". You can also not use the headset control to answer or end a call and if you use the DialPad to manually dial a phone number you have to split or double tap. Touch typing does not work in any VoIP app i have ever seen, it must be a restriction from apple.
