Another option that I use is a program called MobileSyncBrowser which I run on my Windows XP system. This product costs $20 for the full version but you can get one that exports a little less for less money. You have to use iTunes to create unencrypted backups which this program uses.
MobileSyncBrowser installs on your computer and you run it like any other program. It finds the latest backup you made with iTunes and will allow you to export or save entire message threads, notes, VoiceMemos, contacts, and more depending on which version you get. I'm not sure about accessibility with Jaws but it works well with ZoomText.
