I can answer your junk folder question. You want to double tap on your mailbox folder under accounts heading. Then you want to navigate to your trash folder. Now at the top of the screen, there is an edit button. Double tap on this. Now on the bottom left of the screen, there is a delete all button. Double tap that, and then again to confirm.
