Saved the following information for relabeling various icons, but don't know if it will apply to buttons:
To assign custom labels using VoiceOver: Find the element that you would like to rename, then double tap and hold with 2 fingers. A text field will then pop up and you can enter the new label. Then, flick right twice to save, and it's done. Thanks goes out to original poster--sorry, didn't take down person's name.
