Amy, If you don't want to be in All Inboxes then just tap on the button at the very top left of the screen which Voiceover reads as "Mailboxes, back" button. This Takes you to the main screen of the Mail app and here all your accounts are listed.
If you are on a mail message and flick down with one finger what exactly does Voiceover say? I understand it can be frustrating if something doesn't work, but if you want somebody to help you have to be very specific and explain what behavior you experience. You say it doesn't say trash like it used to, so what is it saying?
