Open iTunes, go into Edit, Preferences and on the General tab which has
focus when you get into Preferences tab down to the combo box which says
"When you insert a CD:". Here you have 5 choices:
Show CD
Play CD
Ask to Import CD
Import CD
Import CD and Eject

I suggest if you want to do a collection to select the "Import CD and Eject"
option. This will if I remember correctly require no interaction on your
side other than putting the CD into your drive, wait until it pops out and
put in the next.

Also, once you made your selection, tab one more time to "Import Settings".
This is a button, activate it with space or enter and specify your import
preferences, e.g. format, quality etc.
If you are firmly in the Apple camp, I recommend the AAC Encoder option, if
you want to be more universal, MP3 is good, both will work well with Apple.
As for quality, I prefer the iTunes Plus format which is the second in the
list after High Quality. I?Tunes Plus rips at 256 Kbps. I find he files are
still reasonable in size but it is good quality and it is also what you get
when you download songs from iTunes.
Lastly, once you set your Import Settings and pressed OK, tab one more time
and make sure the "Automatically Retrieve CD Track Names from the Internet"
checkbox is checked. This will ensure that for almost all CD's out there the
correct song titles, album name and so on are downloaded. If you have any
CD's of very small local groups they might not be available from the online
databases, but it's rather rare. Normally this is checked by default.
Now just tab to OK and activate it, then put in a CD and try it.
By default your ripped files will be stored in the Music folder under
iTunes, iTunes Media and Music. Here it should be by artist name and album
name.
